transformation

I know a lot of new mommies have their own transformation stories & they are all so different! This is mine. Like a majority of pregnant women, I gained more weight than I would've liked. We all learned that you only need to gain about 25 pounds if you're a normal weight to begin with. So of course, I thought, "Great! I am only gaining 25 pounds!" Oh, how wrong I was! I ended up gaining a whopping 45 pounds. I was still walking almost every day & eating fairly well, but nonetheless, I felt like a whale with very swollen legs. Granted, I was in Perris' glorious 105 degree weather for work every day [in an office of course]. But let's get real, it was not 45 pounds of water weight! I lost 4 pounds in the last month of my pregnancy, probably due to the fact that the weather had cooled down significantly.

The day we brought Beck home from the hospital, I took a very long shower & then stepped on the scale... what the f#$&! I only lost 10 pounds. But the pounds really did start melting off due to breastfeeding & walking over the next few weeks. Now here I am 6 months later & I still have 8 pounds to go [12 would be even better]. It's really strange though becoming a mom & how you begin to feel about your body. Even though I am 8 pounds heavier than before I got pregnant, I feel way more secure about the way I look. It's as if because my body has a higher purpose than to just not piss me off when I look in the mirror. It feeds my baby & that gives me more confidence than anything else in my entire life. 

I do believe that beauty comes in all sizes. But let's be honest, health does not. It is wonderful to be happy about your womanly, curvy body, granted you are still physically healthy. That is the crossroad I am currently at. Some may argue that my weight is just fine & even still below average, but I just do not feel I am the healthiest I can be. No, I am not going to go on some crazy crash diet. For a couple reasons: one, I will not jeopardize the ability to feed my baby, and two, crash diets do not work!

I'm doing it the old fashion way. Good ol' exercise. I've also cut out beef, chicken, turkey & pork, because after doing some research, it can be difficult to pin point just where your meat comes from. I eat a bowl of healthy cereal with soy milk in the morning & then for lunch, I have one of these bad boys...


One batch in your blender makes about 3 smoothies:
1/2 bag of spinach
1 cup pineapple
1 cup plain yogurt
3 bananas
1/2 cup water

It is delicious & healthy & actually fills you up! I've cut out bad snacking throughout the day [carrots are welcome!] Also, no late night bowls of cereal! I am not telling this story & explaining my plan because I think every one is dying to know. It just makes it seem more permanent that it's online! So we will see how I am transformed & I will continue to ponder whether or not I will post pictures :)

recipe for tonight

Penne Alfredo with Chicken, Mushrooms, and Spinach


1 boneless, skinless chicken cutlet 
Salt 
Pepper 
1 teaspoon olive oil 
3 to 4 garlic cloves, minced 
1 teaspoon dried crushed red pepper 
5 button mushrooms, sliced 
1½ teaspoons organic butter 
1½ teaspoons 100% whole wheat flour 
¼ cup heavy cream 
½ cup packed baby spinach leaves 
1 serving 100% whole-grain penne, cooked according to package directions and drained 

1. Sprinkle chicken with salt and pepper to taste. Heat oil in a small skillet or saucepan over medium heat; add chicken, and cook 2 to 3 minutes on each side or until cooked through. Remove from pan, and set aside. 

2. Add garlic, crushed red pepper, and mushrooms to oil in pan; sauté 30 seconds or until garlic is golden brown and fragrant. With a wooden spoon, move mushrooms, garlic, and perimeter of pan, and add butter to center. When butter has melted, whisk in flour; cook 1 to 2 minutes. Reduce heat to low, and whisk in heavy cream. (Add sauce is too thick, stir in water until it comes to your desired consistency.) 

3. Stir in pasta and spinach until pasta is heated through and spinach is just wilted. (Do not overcook.) Sprinkle with additional dried crushed red pepper, if desired. Makes 1 serving.
